Ingredients

  • 1/2 cup Rajgira Flour
  • 1/4 cup Powdered Sugar
  • 1/4 cup Ghee
  • 1 tbsp Barik Sooji
  • 1/2 tsp Baking Powder
  • 1 tbsp Strawberry jam/crush
  • 7-8 chopped Pista for garnishing

Instructions

Take a bowl and add ghee and powdered sugar and whisk it with a wire whisk until it becomes creamy and fluffy.

Now add Rajgira flour, Barik sooji, baking powder and mix it properly with soft hands and make a dough of the mixture. (Tip- do not make the dough hard)

Now take a baking tray and grease it with ghee and take small lumps out of the dough and make nankhatai shaped cookies out of it.

Once ready take a knife and slightly cut into X shape on top surface of the nankhatai and place pista in between the cut by a slight press.

Make sure to keep an even gap in between the nankhatai for proper baking.

In case of jam garnishing, slightly press your thumb on top of the nankhatai and create a round surface to place the jam or crush.

Now pre heat the microwave oven on convection mode at 180 degree for 5 minutes.

Once pre heated, carefully place the nankhatai tray into the oven.

Now again set the oven at convection mode at 180 degrees for 15 minutes baking time.

On completion of 10 minutes take out the baking tray and place the strawberry jam/crush on the nankhatai and again place the tray in the oven for remaining baking time.

On completion of the baking time, take out the nankhatai and let it cool down so that it gets ready for a tasty lip smacking serving !!!
